garlic, chorizo, broccoli and olive pasta
yeah the pasta is cooked in milk. live a little. get crazy.
INGREDIENTS
2 garlic cloves
2 tbsp butter
1/2 a chorizo sausage
1/3 a head of broccoli
8 kalamata olives
2 tbsp olive brine
1 tbsp chicken stock
1 cup milk
2 cups water
1 tbsp italian herbs
1/2 tsp pepper
1/4 tsp salt
1/4 packet (or a little more) of any long pasta (spaghetti, fettucine, etc)
1/2 tbsp cooking oil
1/3 cup parmesan cheese
METHOD
- Finely chop garlic. Dice chorizo and olives. Chop broccoli into small florets.
- Melt the butter over low heat in a medium-sized saucepan. When melted, add garlic and fry until fragrant.
- Take saucepan off the heat. Add water, chicken stock, olive brine, italian herbs, pepper, and salt - then add the milk and stir until all combined.
- Return saucepan to heat and turn it up to medium-high. Bring to a simmer.
- When simmering, add pasta and stir it for the first few minutes, then every minute or so after that.
- While the pasta is cooking, put broccoli and 1 tsp of water in a mug/bowl covered with a plate and microwave for 3 minutes.
- Heat cooking oil in a small frying pan over medium-high heat, then fry the chorizo and olives until browned.
- When the pasta’s sauce is about level with the pasta itself, put the chorizo, olives and broccoli straight in and stir them around.
9. Once these ingredients are incorporated, take the saucepan off the heat and add your parmesan cheese.
